About the Brew
The whole thing started with one of our brewers pinching off a cask’s worth of still-bubbling, New Grist from one of the fermenters. After adding some lime juice, zest, and a pinch of sea salt, he stashed the cask away to let the new ingredients meld and mellow. The result: a pleasantly-tart, gluten-free brew with a punch of lime and a breezy hint of sea salt that’s so refreshing, we just had to brew enough to share.
Rice Extract, Sorghum
